Wash and dry all produce. Bring a #large pot{} of salted water to a boil. Halve, peel, and thinly slice @shallot{2%unit}. Thinly slice @garlic{4%clove}. Trim, then slice @button mushrooms{8%ounce}. Roughly chop @peanuts{2%ounce}. Peel and mince @ginger{2%thumb} until you have 1 tbsp. Pick leaves from @basil{½%ounce} and tear into small pieces. Thinly slice @chili pepper{1%unit}.

Heat a drizzle of @vegetable oil{2%tbsp} in a #large pan{} over medium-high heat. Add garlic and cook until fragrant, ~{30%seconds}. Add @broccoli florets{16%ounce} and toss. Pour in ½ cup water and cook, tossing occasionally, until tender, ~{4-5%minutes}. Season with @salt{} and @pepper{}. Remove from pan and set aside.

Heat another drizzle of oil in the same pan over medium-high heat. Add mushrooms and cook until softened and a few shades darker, ~{4-5%minutes}. Season with salt and pepper, then set aside with broccoli.

Once water is boiling, add @wide rice noodles{12%ounce} to the pot. Remove from heat and let soak until al dente, ~{6-7%minutes}. Drain and rinse under cold water. Meanwhile, stir together @soy sauce{4%tbsp}, ½ TBSP @sesame oil{1%tbsp}, and 1 TBSP @sugar{2%tbsp} in a #small bowl{}.

In the same pan, heat another drizzle of oil. Add shallot and chili pepper to taste. Cook until softened, ~{2-3%minutes}. Toss in ginger and @shrimp{20%ounce} and cook until shrimp are starting to turn opaque, ~{2%minutes}. Season with salt and pepper. Add rice noodles and the soy sauce mixture to the pan and toss to coat.

Add broccoli, mushrooms, and basil leaves to the pan. Cook, tossing constantly, until shrimp are cooked through and everything is well combined, ~{2%minutes}. Divide between bowls and sprinkle with more peanuts.
